Полученные результаты показывают важность оптимизации процесса сушки, чтобы получить сухие молочные продукты на основе верблюжьего молока с хорошими функциональными и физико-химическими свойствами. Установлено, что индекс растворимости в воде сухого верблюжьего молока сублимационной сушки составил 38,33%, а индекс абсорбции воды - 125,20%.</p></abstract><trans-abstract xml:lang="en"><p>The article presents the results of the study of the physical properties of camel milk powder obtained by freeze-drying. The results show the importance of optimizing the drying process to obtain camel milk-based dry dairy products with good functional and physicochemical properties.
