Молоко является ценным пищевым продуктом, обладающим высокой биологической и питательной ценностью. Оно содержит необходимые для организма человека белки, жиры, витамины и микроэлементы, что делает его важной частью ежедневного рациона. Однако в условиях экологической нестабильности и техногенного загрязнения окружающей среды молочная продукция может содержать токсичные вещества, включая радионуклиды и соли тяжелых металлов, представляющие угрозу для здоровья человека. Актуальной задачей является разработка действенных методов очистки молока от вредных загрязнителей. В настоящей работе представлено усовершенствование экспериментальной установки, основанной на методе адсорбции, предназначенной для снижения содержания токсичных веществ в молоке. Проведены исследования по подбору оптимальных параметров и природных сорбентов в условиях адсорбции. Совершенствование установки для очистки жидких пищевых продуктов позволило реализовать возможность варьирования схемы прохождения жидкости (через одну, две или три колонны в различных комбинациях), что позволяет регулировать процесс очистки, уровень загрязненности и тип токсичных веществ. Метод адсорбции обеспечивает удаление токсичных веществ без разрушения ценных пищевых веществ, таких как белки, витамины и микроэлементы. Установка не требует сложной автоматики и легко обслуживается, что делает ее пригодной для использования в лабораторных условиях. Использование доступных и недорогих природных сорбентов снижает себестоимость процесса очистки.</p></abstract><trans-abstract xml:lang="en"><p>This article discusses the reduction of radionuclide and heavy metal salt content in milk through the improvement of a system based on the adsorption method. Milk is a valuable food product with high biological and nutritional value. It contains proteins, fats, vitamins, and trace elements necessary for the human body, making it an important part of the daily diet. However, under conditions of environmental instability and anthropogenic pollution, dairy products may contain toxic substances, including radionuclides and heavy metal salts, which pose a threat to human health. An important task is the development of effective methods for purifying milk from harmful contaminants. This work presents the improvement of an experimental setup based on the adsorption method, designed to reduce the content of toxic substances in milk. Research was conducted to select optimal parameters and natural adsorbents under adsorption conditions. The improvement of the system for purifying liquid food products made it possible to vary the liquid flow scheme (through one, two, or three columns in different combinations), which allows controlling the purification process, contamination level, and type of toxic substances. The adsorption method ensures the removal of toxic substances without damaging valuable food components such as proteins, vitamins, and trace elements. The system does not require complex automation and is easy to maintain, making it suitable for laboratory use.
